  • 2 tbsp olive oil good quality
  • 1 zest lemon zest only
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp garlic powder or fresh minced garlic
  • 2 tbsp chopped fresh herbs parsley, thyme, or basil

  • optional smoked paprika or chili flakes for a smoky or spicy touch

Method
 

  1. Preheat your air fryer to 200°C (390°F).
  2. Pat the chicken breasts dry with paper towels to remove excess moisture, ensuring they crisp up nicely.
  3. In a small mixing bowl, whisk together olive oil, lemon zest, lemon juice, garlic powder, and chopped herbs until well combined.
  4. Use a basting brush or spoon to evenly coat each chicken breast with the herb and citrus mixture, covering all sides.
  5. Place the coated chicken breasts in the air fryer basket, spacing them out to allow air circulation.
  6. Cook for 10-12 minutes, flipping the chicken halfway through, until the outside is golden and crispy, and the internal temperature reaches 75°C (165°F).
  7. Once cooked, use tongs to transfer the chicken to a plate, and let it rest for 5 minutes to allow the juices to settle.
  8. Slice the chicken breasts against the grain and serve immediately, garnished with extra herbs or lemon wedges if desired.
