Ingredients

  • 4 pieces chicken breasts skinless, boneless
  • 2 tablespoons olive oil good quality
  • 1 zest lemon zest only
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon garlic powder
  • 2 tablespoons chopped fresh herbs parsley, thyme, or basil
  • to taste salt
  • to taste black pepper
  • optional smoked paprika or chili flakes for extra flavor

Equipment

  • Air fryer
  • Meat thermometer
  • Small mixing bowl
  • Basting brush or spoon
  • Tongs

Method

  1. Preheat your air fryer to 200°C (390°F) and prepare a clean surface.
  2. Pat the chicken breasts dry with paper towels until the surface feels slightly tacky and no moisture drips off—this helps achieve a crispy exterior.
  3. In a small bowl, whisk together olive oil, lemon zest, lemon juice, garlic powder, and chopped herbs until well combined and fragrant.
  4. Using a basting brush or spoon, evenly coat each chicken breast with the herb and citrus mixture, making sure all sides are covered.
  5. Place the coated chicken breasts into the air fryer basket, leaving enough space between each piece for air to circulate freely.
  6. Cook the chicken for 10-12 minutes, flipping halfway through, until the outside is golden brown and the internal temperature reaches 75°C (165°F) when checked with a meat thermometer.
  7. Once cooked, carefully remove the chicken breasts from the air fryer and let them rest for 5 minutes on a cutting board or plate—this allows the juices to redistribute inside.
  8. Slice the chicken breasts to reveal a juicy, tender interior with a crispy exterior, ready to serve.

Notes

Feel free to add smoked paprika or chili flakes for a smoky or spicy twist. Resting the chicken for a few minutes ensures maximum juiciness and flavor.
